I woke up with a chill and an empty stomach. There’s a nip in the air up here in Minnesota, marking what is arguable the best time of year to visit our state. Warm-blooded through and through, this is when many of us begin to thrive. Besides, I’d much rather curl up in a sweater than frolic in a sundress. Call us strange or whatever.
Our urge to slow down and spend more time in the kitchen is in sync with the weather, and on this chilly morning my day wasn’t going to start without eggs baked in garlic, butter, and herbs, served alongside a slice of wheat toast slathered with cream cheese. And that is how I spent my morning.
Recipe for a Cold Morning: Baked Eggs in Butter, Garlic, and Herbs
Ingredients
2 large eggs
A small handful of herbs (whatever you have: basil, cilantro, fresh thyme)
1 clove garlic
1 pad butter
Salt
Pepper
1. Preheat the oven to 400 degrees.
2. Heat a small cast-iron skillet over medium heat.
3. While the pan is warming, mince one small clove of garlic and roughly chop the herbs.
4. When your skillet is warm to the touch, melt butter until bubbling, then add the garlic. Stir until fragrant, around 30 seconds.
5. Stir in herbs, and then crack one egg into the skillet at a time.
6. Sprinkle with salt and pepper and place in the oven until the whites have set, around 3 minutes.

I wholeheartedly agree with you about MN Fall weather! The chilly mornings that make you want to curl up tighter underneath your bedcovers, and the smell of fresh, crisp fall air are some of life’s little treasures in MN.
