How wonderful it was to have a weekend at home! It’s been a while since I’ve been able to wake up in my own bed and not rush out the door. One of the benefits of a slower weekend is time in the kitchen, but when R&R is needed most, getting in the kitchen isn’t exactly the first thing one has in mind. The reality is most of us are whipping up meals that require no recipe at all, but that doesn’t mean they don’t have to feel special or delicious. To illustrate this idea, I documented the meals I made last Sunday for you guys and included the very simple recipes below. Enjoy!
Breakfast: Double Nut Toast with Cinnamon Apples
Whole Wheat Bread
Creamy Peanut Butter
Honey
Sliced Almonds
Honeycrisp Apple
Cinnamon
Top the toast with peanut butter, honey, and almonds. Slice apple and top with cinnamon.
Lunch: Tomato Basil Orecchiette with Lemon and Parmesan
2 Tomatoes
Handful of Basil
Half a Lemon
2.5 cups of Orecchiette Pasta
1/2 cup Parmesan
Garlic Infused Olive Oil
Pine Nuts
Maldon Salt
Fresh Pepper
Bring a pot of salted water to a boil and throw in the orecchiette. While the pasta is cooking, chop the tomatoes, shred the basil and grate parmesan cheese. Add the tomatoes and parmesan cheese to a bowl. Drain the pasta once it is al dente, and add to the bowl of tomatoes and cheese. Top with basil, pine nuts and a squeeze of lemon. Drizzle with garlic olive oil, and top with Maldon salt and fresh ground pepper. Toss together and serve.
Dinner: BLT with a Slow-Roasted Twist
Slow roasted tomatoes
Crispy bacon
Multigrain bread
Avocado
Arugula or Baby Kale
Top toasted bread with ingredients. Enjoy a new twist on an old classic!
