Remember my last ice cream-focused article (are you appreciating my editorial range yet?) where I told you it was my job to pass along any and all life hacks to you?
WELP. *DJ Khaled voice* ANOTHER ONE.
I read this suggestion in a Lucky Peach magazine (RIP) awhile ago and I’ve been using it ever since. Mostly because I’m lazy but also because it’s delicious as heck, no matter your combo (foreshadowing). It’s the perfect dinner party dessert — which Kate and Joe can attest to; we devoured it post-meal while we lit a Christmas tree on fire (a different story for a different time) and then they finished it the next day for breakfast because they do not f*ck around.
All future desserts after this one will feel like a waste of time and taste buds, I’m sorry. Let’s do this.
Choose your cookie base! I’ve done shortbread cookies, animal crackers, Oreos, chocolate chip cookies, and gingersnaps but holy god almighty, I cannot wait to test Girl Scout Thin Mints.
Choose your ice cream! This is where you need to be a bit strategic. There are zillions of combos but you probably wouldn’t do say, animal crackers with mint chip ice cream (or maybe you would, this is a completely nonjudgmental space and I eat food that’s been in my teeth for like two hours so who the hell am I to call you out for questionable edible endeavors.) My personal favorite pairing includes shortbread cookies with vanilla bean ice cream and some toasted sliced almonds on top. You could also do: cookie dough ice cream with a chocolate chip cookie base; strawberry ice cream with crushed Oreos; pistachio ice cream with crumbled gingersnaps — you get the gist.
POUND ‘EM. Get out your White House administration aggravation frustrations by banging a hammer to a bag filled with cookies. You’re looking for crumb-size pieces here.
Mix the crumbs with melted butter. (OH YOU THOUGHT THIS WAS A GAME?)
Press the crumb/butter mixture into a pie tin. I use the tin foil ones you can find at any target, grocery store, or probably gas station. They are functional and I am not rich.
Once your cookie mixture is pressed in I like to pop it in the freezer for ten minutes or so just to get it nice and grounded in the tin. This is the same time you should take your ice cream out so it can soften a bit.
Take out that crust and fill it with the softened ice cream. If you want to get fancy and top it with anything, now’s the time. Caramel, chocolate sauce, whipped cream; this pie is your oyster.
Pop it back in the freezer until you need it.
GO FORTH AND FLOURISH WITH YOUR AWARD-WINNING DESSERT.

For sure! So for a whole pack of shortbread cookies, I used about 3-4 T. of melted butter.
