7 of My Favorite Go-To Summer Recipes | Wit & Delight

Hello, beautiful photo of our previously functioning kitchen. Oh how I miss you.

I am counting down the days until I can cook again! In another month and a half (or so), I’ll have my beloved window-side prep station back. I cannot wait.

Given the current state of our kitchen, I haven’t had a chance to cook very much this month. So, in lieu of my traditional end-of-month roundup of recipes I’ve made, I’m sharing a few of my go-to summer recipes of years past. I hope these inspire your cooking adventures this summer and beyond!

Pea and Mint Risotto

I crave this recipe year-round but there is only one time of year I can get fresh peas and mint picked from my backyard. That time is now!

Pepper Panzanella with Burrata & Olives

I have a soft spot in my heart for panzanella. I particularly like this recipe, which suggests grilling the bread until it has crispy charred bits. The contrast with creamy burrata and brine-y olives is something special!

I make this recipe for friends and family and they repeatedly ask for it when they come over! It’s a crowd pleaser every time.

This recipe isn’t a dish, but rather a condiment for summer cooking—it’s basically a pesto that can be made with any leftover green. I heard about it from Carla Lalli Music on The Splendid Table. It’s super resourceful and a great way to savor the flavors of the summer season long after the shelf life of your weekly greens.
