This month, most of the cooking I did centered around no-fuss meals. I discovered my new favorite sandwich, an olive oil that transforms leftovers, and my favorite toppings to make a salad into a meal that will keep you full for hours. All of the ideas below are simple, flavorful, and definitely added to my favorite go-to meals list!

The Everything Bagel Sandwich
Listen, some days a super savory bagel sandwich is as close to a meal as it’s going to get. This particular version (pictured above) goes something like this: between a sliced and toasted Everything bagel, add cream cheese, turkey, salami, pickles, and buffalo sauce. Hello, flavor town!

Peanut Soba Noodles
I noticed we had two packets of soba noodles in the back of the pantry and thought I’d make a version of this recipe on a whim. We didn’t have anything in our crisper drawer beyond some almost-wilted cilantro, so that’s all the green I added! It was an easy, filling, and delicious pantry meal.

Leftover Soba Noodles with Chili Olive Oil
I’m all about repurposing leftovers over here. In that spirit, here is a “brilliant” recipe for you…
Take those leftover peanut soba noodles from before, put them into a bowl (cold), add avocado if desired, and drizzle the most delicious chili olive oil plus a sprinkle of Maldon sea salt on top. IT IS SO GOOD.

Kate’s “Garage Salad”
They say a salad (or meal in general) made by someone else always tastes better. Well, having your favorite ingredients ready to be thrown on top of your leafy greens might be just as good. For my “garage salad,” I like to go heavy on the hearty toppings: roasted beets, crispy chickpeas, slow-roasted garlic, shaved Brussels sprouts, toasted pepitas, and hard-boiled eggs. All it needs on top is a drizzle of olive oil (my current favorite for salads is this one) and a splash of quality balsamic vinegar.
